It is always a good idea to manual backup your iPhone files before you install the new version of iOS. With your iTunes, you can back up all your iOS devices such as iPhone, iPad, iPod touch. By default, when you connect your iPhone to your computer, it automatically syncs all the files, but you can easily manual backup iPhone to computer.
How do you backup your iPhone to your computer?
When you connect your iPhone or any iOS device to the computer, open iTunes and on the left list of devices, select your iOS device say iPhone and right click > select backup. It will completely backup everything in your iPhone.
The method is same for Windows or Mac. With applications like Address book, you can backup iPhone contacts alone. If you want to know where your backup files are stored.

It is always suggested to let the iTunes handle all the backup and restoration work. If you know what you are doing, then you can play with these folders and files.
You can also setup automatic backups to iCloud, but if you’re restoring it manually or before jailbreak, here is how to backup manually to iCloud from iPhone or any iOS device. Without the help of iTunes, you can directly backup to iCloud manually from your iPhone.
Just to go settings app, iCloud > select storage and backup and hit the Backup Now button. You can watch the progress bar to estimate the time backing up your files. Since you’re in a Wi-Fi network, it will be quick.
